Individual Whole-Wheat Cinnamon Banana Pudding

  • 1/2 cup sugar
  • 1/3 cup whole-wheat flour
  • 2 eggs
  • 2 cups milk
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 24 WhoNu?® Vanilla Wafer Cookies
  • 2 large bananas, sliced

Individual Whole-Wheat Cinnamon Banana Pudding

  1. In a medium saucepan, add sugar, flour, eggs, milk and salt. Stir well with a whisk.
  2. Cook the mixture over medium-low heat, stirring constantly, until it starts to thicken (about 15 minutes).
  3. Remove the saucepan from heat and stir in the vanilla and cinnamon. Set aside.
  4. Place 1 WhoNu?® Vanilla Wafer Cookie on the bottom of each of 12 paper-lined muffin cups. (We recommend buying the cups that are lined with foil.)
  5. Place 3 banana slices on top of the cookie.
  6. Pour pudding over the cookie and bananas, filling each muffin liner about 3/4 full.
  7. Banana puddings can be eaten hot, or chilled and eaten cold later. Yummy topped with whipped cream!
